Making KILLER Mexican Carne Asada Street Tacos & Sides

Jake here from Grillaholics, and today, we're gonna grill up the best darn carne asada tacos you've ever had - and the best part? You're gonna be able to do it right in your own backyard! And with our latest Brazilian Steakhouse rub - you'll be able to do it over and over again!
Alright, so, this past weekend, I got hit with a craving for some Mexican street tacos - And sure... I could have hit up any one of the dozens of taco trucks - but with the weather so nice, let's be honest -- I wanted to break out the grill.
Plus, this was the perfect time to break out our new Brazilian Steakhouse Rub and start playing around!
With flavors of ancho chilis, cumin, cilantro, garlic, onion, and lime - This stuff is perfect as it is, but with skirt steak being a rather tough cut of beef, I wanted to make sure I got it into a marinade for a few hours to absorb all those premium spices, and to help break down that tough connective tissue that skirt steaks are known for.
So I made a quick marinade with some simple ingredients, and DUDE! It was over-the-TOP good.
This recipe was a hit with my family, and I'm confident it'll be a hit with yours too!
Alright, so the weather this weekend has been absolutely gorgeous.
I'm talkin' 75 and sunny, blue skies - the whole deal.
The kids were running around the yard, jumping on the trampoline, playing with the neighbor kids - ya know - being kids.
My wife was absorbing all the sunshine she could get, and spent the afternoon planting new veggies in the garden.
And it was all made even better by the mouthwatering aroma of smoke and marinated carne asada wafting through the air.
Even my youngest, Mollie, couldn't stop asking when it would be ready because it smelled (to quote) "sooo goooooood!"
Sounds amazing, right?
Well that's why I'm here - to help you start grilling up some KILLER food that will have YOU making more memories around the grill with your friends and family!
So let's go ahead and get you ready for the best tacos of your life - made right in your own backyard!
**DISCLAIMER/WARNING - be careful who you invite over... They're gonna be begging for you to make this again, so make sure you enjoy their company, lol.**
What You'll Need:
(Carne Asada Street Tacos)
Protein:

2 lbs. Skirt Steak
Marinade:
-
4T Olive Oil
-
2T Lime Juice
-
1 Jalapeno (cored and ribs removed, diced)

4 Cloves of Garlic
-
1 bunch Green onion ends
-
Fresh Cilantro (chopped - to taste)
Instructions:
Marinate the Steak:

Mix the olive oil, Brazilian Steakhouse Rub, lime juice, jalapeno, garlic, green onion ends, and cilantro in a bowl.

Marinate the skirt steak in this mixture for about 6 hours in the refrigerator.
Prep the Grill:

Set your grill up for 2-zone grilling (one side for searing, one for slower cooking). Pull the steak out of the fridge about 30 minutes prior while the charcoals are heating up.
Grill the Steak:

Sear the skirt steak on both sides, about 3-4 minutes each.

Move the steak to the cooler side of the grill, put the grill lid on, open the vents, and let it cook for about another 5 minutes.
Rest and Chop:

After pulling the meat off the grill, let it rest for about 10 minutes. Then roughly chop the steak into bite-sized pieces.
Warm the Tortillas:

While the meat is resting, warm some corn tortillas on the grill.

Chop some yellow onion, fresh cilantro, and quarter your limes.
But hold on, we’re not done yet!... We've still got some sides to grill up!
And I'll be honest - I unintentionally made some AMAZING sides for our street tacos...
I just happened to have a bunch of corn my Mother-in-law dropped off fresh from her neighbor's farm, and we had a fresh pineapple I'd picked up to snack on the night prior, so...
I wanted to see how I could use our Brazilian Steakhouse rub to its full potential!
So for the sides, we served grilled corn on the cob with a compound butter made with our new rub, and for desert I grilled up some glazed & grilled pineapple slices! And Oh. My. Gosh. Those pineapple slices are on the permanent roster.
Grilled Corn with Brazilian Steakhouse Compound Butter:
This was SUPER easy - couldn't have been easier, in fact! While the meat was grilling, I threw some corn cobs (husks on) on the lower heat side of the grill. I let them cook for about 15 minutes, then served them with a compound butter made from 2 sticks of softened butter, cilantro to taste, and a tablespoon of Grillaholics Brazilian Steakhouse Rub.
Grilled Honey-Glazed Pineapple Slices w/ Brazilian Steakhouse Rub + Tajin:
For dessert, I mixed a 1/2 cup of honey with 1 tablespoon of Grillaholics Brazilian Steakhouse Rub, and 1 tablespoon of Tajin. I grilled pineapple slices on the high heat side until the honey mixture was caramelized.
This was my son Miles' favorite part of the meal. Little man couldn't get enough! And to be fair, I was snacking the whole time they were grilling, so... I get it, dude!
By the end of the meal, everyone’s plates were empty, and the kids were asking for more tacos and pineapple! Which, if you've got kids - this is a sign of a clear winner.
It was a perfect day, filled with delicious food and the ones I love the most, and I couldn’t have asked for anything more.
