Smoked Pomegranate Chicken Wings

What are we making today? Pomegranate wings. Pomegranate chicken wings. That's right! We're going to use little honey pomegranate juice, real pomegranate molasses, a little Korean chili flake… it's going to be awesome! Stay with us.
I had two pounds of wings here. Before I cut the tips off, just going to spray them up with a little PAM... I'm just looking for a binder here. Take the time to put them in olive oil. Whatever you want to do. It's not going to change the outcome of the recipe.
Just going to spray up both sides, and now, what I'm going to do is hit them up with this Grillaholics Salt Pepper Garlic.
Look, you could just sprinkle salt on these and a little black pepper. You could put your favorite barbecue rub, but I'm just using a salt pepper garlic mix today because… this wing glaze we're going to put on these guys is what I'm looking for in terms of all the flavor. But you can't go wrong with a little salt pepper garlic, right?
We got these wings all seasoned up. Let's get them over to our grill.
And my grill grate's good and hot. And I've already got the plate setter in, so it's a little late to add wood chunks, but I am going to add some sassafras wood chips... You don't want to smoke with it, use pecan or apple or cherry or something like that.
Now, if you're using a pellet grill, set it up to 275, somewhere in that range. Put these on the opposite end of your fire cup. That way you can get a little smoke on them while they're cooking. If you're using the master belt, set it up to 275-300 as well.
Now, I can see those wood chips are starting to catch fire down below...
Pomegranate Juice 2 Cups
Apricot Jelly 1/2 Cup
Balsamic Vinegar 1 Tbsp
Honey 1 Tbsp
Molasses 1 Tbsp
Red Wine Vinaigrette 2 Tbsp
Korean Red Chili Powder 2 Tbsp
Sumac Spice 1 1/2 Tbsp
Rum 1/2 Cup
We got some spice. We got the fruit. This is going to be awesome. You can see it's starting to boil. Just simmer here for 15-20 minutes. However long it takes. This thickens up, and it reduces down by about half.
Grill is running around 280-290. I'm just going to turn these guys over. Starting to get a little color. They're still soft. Not done yet... Let them go another 20-30 minutes. Check on them. See if it's time for the glaze.
It's been another 20 minutes. Wings starting to look pretty good. They're not done yet. I'm gonna do these a little different today. I am going to toss them, and put them back on here.
So there's that sauce. You can see how it reduced down. What I'm going to do is get all those wings in that sauce. Get them coated, and then turn the heat up on this grill. I just want to coat these guys.
