Hey, everyone! How you doing today? My name is Eric. As always I want to thank you for coming by... On this episode of Smo’King, I'm going to show you how to make a whole chicken on your pit barrel cooker.
Now, I've done plenty of chickens in my pin barrel cooker. Usually, I just cut them in half and hang them with the hooks, but I had this turkey hanger that I've done a turkey on in my pit barrel cooker. But I've never used it for a whole chicken, so that's what I'm going to be trying today.
And the reason that got me motivated to try a whole chicken on my pit barrel cooker was because Grillaholics was nice enough to send me this Herbacious Hen barbecue rub.

And if you got yourself a pit barrel cooker, this is super easy. You got a chicken. You got the barbecue rub of your choice. And that's it! I'm going to show you how easy it is to do step by step so stick around let's get cooking!
All right so I'm going to show you how simple and easy this recipe is. You get a chicken, take it out of the pack, rinse it off real well, and apply the barbecue rub of your choice.

So all we're going to do now is we're going to sprinkle this generously on both sides of the chicken. This has got all kinds of interesting spices on it, so I'm very happy to give this a try... Put some on the sides. Make sure you get some under the wing. We'll put a little bit inside the cavity as well...
Here we are fully seasoned. Now like I said, I'm going to use this chicken holder you can get from the pit barrel cooker company. And we just go in through the neck on the top part here. I'm going to slide it down, and this is basically how it's going to hang in the pit barrel. So in the meantime, I'm just going to throw this in the fridge while I go outside and fire up the pit barrel.
All right, look at that beautiful chicken...
Get that lid on there. The wood should start smoking shortly...
It looks like the internal temperature of the chicken is 32. Pit barrel is currently at 116… so it's climbing. We'll keep an eye on it.

It's been around 46 minutes. It shows the chicken is at 120 and the pit barrel is at 246, so not as hot as it normally gets... But let's take a look at it... It's definitely getting some smoke...
Look at that. Definitely tell its taken on some color... Looks beautiful, but it's not ready yet. I'm gonna move it over here because that piece of cherry would caught on fire. We still got some time. We'll be back.
