Grilled Fish Tacos with Mango Salsa

Ingredients
- 4 Mahi-Mahi fillets
- ¼ cup - Olive oil
- 2 tbsp - Lime juice
- 1 tsp - Cumin
- 1 tsp - Chili powder
- Flour tortillas
Mango Salsa
- 1 cup - Mangoes, diced
- 1 Jalapeño, grilled, charred, and minced
- ⅓ cup - Red onions, diced
- 1 tbsp - Fresh cilantro, chopped
- 1 tbsp - Lime juice
Spicy Mayo
- 1 cup - Mayonnaise
- 1 tbsp - Sriracha
- ½ tsp - Lime juice
Directions
- Preheat you grill at medium-high
- Mix all of the Spicy Mayo ingredients together and set aside in refrigerator;
- Gently mix all of the Mango Salsa ingredients together in a bowl and refrigerate;
- Brush the Mahi-Mahi with olive oil, then season with salt, pepper, cumin and chili powder
- Place the fish on the grill over direct heat and cook for 3 to 4 minutes per side
- Writer’s note: Fish tends to stick to grill grates, so you have a few options. You can brush the grates with oil prior to grilling -or- you can use a non-stick Grill Mat, which can be purchased here.
- Warm the flour tortillas on the grill grate for about 30 sec per side.
- Serve and enjoy!
